Ingredients:
2 zucchinis, sliced
1 small onion, sliced
1 tsp garlic, minced
1 Tbsp. Olive oil
1 Tbsp Everything Indian
2 slices of sharp yellow cheddar
2 Portuguese rolls, halved
Salt to taste
Method:
In a medium saute pan, add oil, zucchini, and onions for 3-4 minutes on medium.
Add garlic and Everything Indian and saute for another 5 minutes.
Turn the stove off and add the 2 slices of cheese while the veggies are warm.
Season with salt to taste.
Lightly toast the rolls. Place ½ of vegetable and cheese mixture on a roll and repeat with other rolls.
Serve warm!
