Ingredients:
2 cup mushroom, sliced
1/2 red onion, sliced
2 eggs
1 Tbsp cilantro, chopped
1 Tbsp Chaat Party
2 rotis or tortillas
Lemon juice
Oil
Salt to taste
Method:
In a saute pan on medium heat, add oil and saute mushroom, red onions and spinach for 4-5 minutes.
Remove veggies from the pan and wipe dry.
Add a little more oil and crack an egg.
Place your roti/tortilla and allow the egg and tortilla to cook together for 2-3 minutes and flip on the other side for 1 minute.
Repeat with remaining egg and roti.
To build frankie, spoon 1/2 of the vegetable mixture, a pinch of cilantro, 1/2 Tbsp Chaat Party, lemon juice, and salt on the roti.
Roll up tightly and cut in half.
