Ingredients:- 2 zucchinis, sliced
- 1 small onion, sliced
- 1 t. garlic, minced
- 1 tbsp. Olive oil
- 1 T. everything indian
- 2 slices of sharp yellow cheddar
- 2 Portuguese rolls, halved
- Salt to taste
In a medium sauté pan, add oil and zucchini and onions for 3–4 minutes on medium. Add garlic and everything Indian and sauté for another 5 minutes. Turn the stove off and add the 2 slices of cheese while the veggies are warm. Season with salt to taste.
Lightly toast the rolls. Place ½ of vegetable and cheese mixture on a roll and repeat with other roll. Serve warm!
