Ingredients:- 2 cup mushroom, sliced
- 1/2 red onion, sliced
- 2 eggs
- 1 T. cilantro, chopped
- 1 T. chaat party
- 2 rotis or tortillas
- Lemon juice
- Oil
- Salt to taste
In a saute pan on medium heat, add oil and saute mushroom, red onions and spinach for 4-5 minutes. Remove veggies from the pan and wipe dry. Add a little more oil and crack an egg. Place your roti/tortilla and allow the egg and tortilla to cook together for 2-3 minutes and flip on the other side for 1 minute. Repeat with remaining egg and roti.
To build frankie, spoon 1/2 of vegetable mixture, pinch of cilantro, 1/2 T. chaat masala, lemon juice and salt on roti. Roll up tightly and cut in half.
