Ingredients
4 cups grated carrots
¼ cup ghee
1 cup half and half
⅓ cup sugar
1 Tbsp Sona Saffron
Garnish
Chopped nuts (pistachio, cashew, or almonds)
½ tsp sona saffron
Method:
Saute carrots in ghee for 5 minutes until softened. Add Sona saffron and saute for another minute. Add the half and half and simmer till the milk is absorbed and thickened with the carrots. Add the sugar and continue cooking till the ghee separates for about 5-7 minutes. Make sure to keep stirring so the halwa does not burn. Serve garnished with nuts and sona saffron.
