Ingredients:
2 cups whole wheat flour
3/4 of water or more if needed
2 potato, boiled and grated
2 Tbsp Everything Indian
2 tsp cilantro, chopped
2 tsp salt
4 Tbsp oil
Extra whole wheat flour for dusting
Method:
In a bowl combine flour, water, salt, and 2 Tbsp oil.
Knead well until the dough becomes soft, this will take about 5 minutes.
In a small bowl, add potato, Everything Indian, cilantro, and salt.
Set aside.
Divide dough into 8 balls.
Take one dough ball, dust it in the flour, and roll it with a rolling pin to a 6 " circle.
Divide the filling into 8 portions, add one portion of the stuffing to the circle and bring up the edges to form a dumpling, dust again with dry flour, and roll again into an 8 " circle.
Heat a cast iron skillet on medium heat and cook the paratha on both sides for 4-5 minutes, adding a little ghee/oil.
Repeat the same for the rest of the parathas.
