Ingredients:- 2 cups whole wheat flour
- 3/4 of water or more if needed
- 2 potato, boiled and grated
- 2 T. Everything Indian
- 2 t. cilantro, chopped
- 2 t. salt
- 4 T. oil
- Extra whole wheat flour for dusting
In a bowl, combine flour, water, salt and 2 T. oil. Knead well until dough becomes soft, this will take about 5 minutes. In a small bowl, add potato, everything Indian, cilantro and salt. Keep aside.
Divide dough into 8 balls. Take one dough ball and dust it in the flour and roll with a rolling pin to a 6" circle. Divide the filling into 8 portions, add one portion of the stuffing to the circle and bring up the edges to form a dumpling, dust again with dry flour, and roll again into an 8" circle. Heat a cast iron skillet on medium heat and cook the paratha on both sides for 4–5 minutes, adding a little ghee/oil. Repeat the same for the rest of the parathas.
