Kale, Mushroom, and Ricotta Lasagna Roll-Ups


Serves 4

Prep time: 10  minutes 

Cook time: 25 minutes 


Ingredients:

4 lasagna noodles, boiled 

1/2 cup kale, chopped 

1 cup Mushrooms, sliced 

1 onion, chopped 

1 Tbsp garlic, minced 

1 cup mozzarella cheese, shredded 

1 Tbsp Pizza Masti 

1 cup ricotta cheese 

1 cup marinara sauce 

Olive oil 

Salt  

Pepper 


Method:

Preheat the oven at 350F. 

In a large pan, add olive oil and saute garlic and onions for 3-4 minutes. 

Add kale and mushrooms and saute until wilted. 

Remove the vegetable mixture from the pan and add mozzarella, ricotta cheese and pizza masti. 

Mix mixture well. 

Lay lasagna noodles flat and scoop 2 tbsp. of the mixture on noodles. 

Roll lasagna into a cylinder and lay them in a baking dish. 

Bake roll-ups with additional sauce and cheese for 15 minutes.
