Cauliflower Coconut Curry
Serves 4

Cook time: 15 minutes
2 cups roasted cauliflower (or a vegetable of your choice)
1 tbsp. ginger, grated
1 tbsp. garlic, grated
2 tbsp. onion, finely chopped
10-12 curry leaves
1 cup coconut milk, unsweetened
1 tbsp. Everything Indian
1.5 tbsp. Chaat party
1 tbsp. Cilantro, chopped
2 tbsp. ghee
In a medium pot, saute onions, ginger, garlic and curry leaves with ghee. Saute for 2-3 minutes. Add everything indian and saute for an additional 1 minute. Add coconut milk and chaat party. Cook for 5 minutes on low and then add cauliflower. Add salt to taste. Cook for 5 more minutes and garnish with cilantro.
